Slow Cooked Cheesy Potatoes

Ingredients

  • 4 98% fat-free rindless shortcut bacon rashers diced
  • 1 onion diced
  • 8 baby potato quartered
  • 1/2 cup cheese shredded
  • 1/2 tsp salt and pepper
  • 1 tbs dried herbs
  • 50 g butter
  • 2 shallots chopped

Method

  • STEP 1
  • Line slow cooker with foil, allow enough to cover the potatoes when finished. Line the base of the foil with non stick baking paper.
  • STEP 2
  • Layer half each of the bacon, onions, potatoes and cheese in slow cooker. Season to taste and dot with butter.
  • STEP 3
  • Repeat layers of bacon, onions, potatoes, cheese and butter.
  • STEP 4
  • Cover with foil.
  • STEP 5
  • Cover and cook on low for 10 hours or on auto for 6-8 hours.
  • STEP 6
  • Sprinkle with diced shallots prior to serving.
