Slow Cooker Sweet Potato Chili

Ingredients

  1. 1 15 oz. can Muir Glen tomato sauce
  2. 1 15 oz. can Muir Glen diced tomatoes
  3. 1 cup water
  4. 1 15 oz. can kidney beans, rinsed and drained
  5. 1 15 oz. can black beans, rinsed and drained
  6. 1 red pepper, chopped
  7. 1 green peppers, chopped
  8. 1 vidalia onion, chopped
  9. 2 celery stalks, chopped
  10. 2 sweet potatoes, cubed
  11. 2 garlic cloves, minced
  12. 2 tbsp chili powder
  13. 1 tbsp paprika
  14. 1/8 tsp cayenne pepper, more to taste
  15. 1 tbsp ground cumin
  16. 1 ½ tsp celery seed
  17. 1 tsp ground cinnamon
  18. Red Pepper Flakes, to taste
  19. Himalayan sea salt, to taste

Instructions

  1. Chop all veggies and place into the crock-pot
  2. Add in beans, tomato sauce, diced tomatoes, water, and spices
  3. Mix well to combine
  4. Set on low for 8 hours
  5. After 7 hours, taste and adjust spices to your liking (i.e. add additional salt, cayenne, or red pepper flakes)
