Easy Slow Cooker Pot Roast with Carrots and Potatoes

Ingredients

  1. 1 (4 lb) pot roast
  2. 1 salt, to taste
  3. 1 black pepper, to taste
  4. 1 tbsp olive oil
  5. 1 packet dry onion soup mix
  6. 2 can (14 oz each) beef broth
  7. 3 potatoes, peeled and cubed, or small potatoes, cut in half
  8. 3 carrots, chopped, or baby carrots
  9. 1 stalk celery, chopped
  10. 1 onion, sliced
  11. 2 clove garlic, minced

Directions

  1. Season the roast with salt and pepper to taste. Heat olive oil in a large skillet over high heat and brown the roast on all sides for about 4 minutes per side.
  2. Place the roast in a slow cooker, then add the onion soup mix, beef broth, potatoes, carrots, celery, onion, and garlic.
  3. Cover and cook on Low for 8 to 10 hours.
