How to make slow cooker saucy potatoes

Cooking spray
4 cups of potatoes, peeled and thinly sliced
1 cup of onion, sliced
10.75 oz can cream of celery soup
12 oz can of evaporated milk
2 tbs butter
½ tsp salt
½ tsp pepper
1.  Spritz your slow cooker with cooking spray and combine all of the ingredients in a large bowl before transferring to the slow cooker.
2.  Cook on high for one hour, then stir and lower the heat to low and cook for 6 – 8 hours or until the potatoes are tender.


This dish is the perfect accompaniment to a whole range of main courses but is particularly good served with meat that’s cooked fairly plainly, so that the delicious creaminess of the potatoes can really shine.  A pile of just-wilted spinach would work well too, as the dark green leaves are a good foil for the sauce.   Finally, if you want to make life that bit easier (and who doesn’t?) don’t bother peeling the potatoes. They’re more nutritious that way, and taste just as good!
