SLOW COOKER ROSEMARY-DIJON CHICKEN

INGREDIENTS

  • 1.5 lbs chicken breasts
  • 1 small onion, sliced
  • 2 apples, chopped
  • 1 lb sweet potatoes, peeled & chopped
  • Salt & pepper to taste
  • Sauce:
  • 2 tbsp fresh or 1 tbsp dried rosemary
  • 3 garlic cloves, minced
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • ¾ cup low-sodium chicken broth

INSTRUCTIONS

  1. Add sweet potato, onion, and apples to the bottom of the slow cooker. Sprinkle with salt and pepper.
  2. Add chicken on top.
  3. Whisk sauce ingredients together in a small bowl.
  4. Pour on top of chicken and other ingredients in the slow cooker.
  5. Cook HIGH 2-3 hours or LOW 4-6
