SLOW COOKER WHOLE ROASTED CHICKEN

INGREDIENTS

  • 2-3 pounds whole chicken
  • 1 tablespoon canola oil
  • ¼ cup orange juice
  • 1 tablespoon Beer Can Chicken Seasoning
  • 1 teaspoon paprika
  • 1½ cups chicken broth
  • 2½ cups premium instant rice

INSTRUCTIONS

  1. Wash and pat dry chicken
  2. Whisk together canola oil, orange juice, beer can seasoning and paprika and brush all over bird
  3. Heat skillet or multi-cooker over medium high heat (or to about 400 degrees)
  4. Add chicken breast side down and let brown for about 4-6 minutes
  5. Flip over and transfer to slow cooker or switch multi-cooker to slow cook
  6. Add broth and then cover and cook on high for about 4 hours or low for about 8 or until chicken is fully cooked (165 degrees)
  7. Remove chicken from slow cooker and stir in rice
  8. Cover and return to high for 10-20 minutes or until rice is cooked and tender
NOTES
I cooked this on low in my 4 quart multi-cooker for 8 hours, then on high for 15 minutes to cook the rice

Optional: slice an orange and place on top of chicken before cooking for even more citrus flavor
