Brown Sugar Slow Cooker Chicken


4-6 chicken breasts
1 cup packed brown sugar
2/3 cup vinegar (any kind, though Lynn uses apple cider vinegar)
¼ cup lemon-lime soda
2-3 tablespoons minced garlic
2 tablespoons soy sauce
1 teaspoon fresh ground pepper
2 tablespoons cornstarch
2 tablespoons water
Rice or noodles, cooked
Red pepper flakes, optional


1. Coat the inside of your slow cooker with nonstick spray and place your chicken breasts into the bottom of the slow cooker.
2. In a separate bowl combine your brown sugar, vinegar, soy sauce, soda, pepper and garlic. Whisk the ingredients until they are completely combined. Pour your mixture over the chicken in your slow cooker.
3. Cover your chicken and sauce and cook on low for 6 to 8 hours or on high for 4 hours.
4. After your chicken is thoroughly cooked, remove it from the slow cooker and set it on a plate. Pour the remaining sauce (from the slow cooker) into a sauce pan. Allow it to boil.
While your sauce is heating up, combine your corn starch and water in a bowl and mix well. Pour the corn starch mixture into your sauce and whisk until the sauce is boiling. Allow entire mixture to boil for about 3 minutes, or until the sauce has thickened.
5. Once your sauce has thickened, set it aside. Place your chicken over rice or noodles. Drizzle the entire dish with your sauce (or glaze) and sprinkle with red pepper flakes (optional).
