Learn to make slow cooker chicken cacciatore


3 1/2 to 4 lbs of meaty chicken
1/3 cup of flour
2 cups of thinly cut mushrooms
14 oz can drained diced tomatoes
1 1/4 cups of diced green pepper
1 cup onion
1 cup carrots
1/2 dry white wine
1/2 tsp salt
1/2 tsp brown black pepper
2 tablespoons of fresh chopped basil
2 tablespoons of fresh chopped parsley
1 tablespoon of fresh chopped thyme


1. Take your chicken and skin it, then toss it in a large plastic sealed bag filled with flower. This will coat the chicken and give it a nice crispy, brown outside. Next, in a large skillet cook it over medium heat with olive oil. Brown all sides.
2. Toss your mushrooms in the pan and cook them on medium-high heat for about 3 minutes.
3. Put the chicken in the bottom of the slow cooker, with the mushrooms on top. Then add in your pepper, tomatoes, onion, carrots, white wine, salt, and pepper.
4. Cook on low for 6-7 hours, or on high for 3-4. Right before serving, stir in the basil, parsley, and thyme.
5. We suggest serving this dish over some fresh linguini or egg noodles. Cook them up in boiling water with a pinch of salt, then before serving toss them in the pan with a bit of their own water and some butter to give them a nice, creamy finish. Then, just pour your Cacciatore right on top.
