slow cooker balsamic chicken recipe


1 tbsp olive oil
4 cloves garlic, finely chopped
1 pound baby carrots, topped
8 boneless, skinless chicken thighs
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp dried basil
½ cup (120 ml) balsamic vinegar
1 onion, sliced
1 pound green beans
Fresh chopped parsley, to garnish


1. Pour the olive oil in the bottom of your slow cooker and add the garlic and baby carrots, then place the chicken thighs on top before seasoning with salt, pepper, garlic powder, basil and vinegar.
2.  Place the onions on top of the chicken and seasonings before setting to cook for 8 hours on low, or on 4 hours on high, adding the green beans for the last 30 minutes of the cooking time, before serving sprinkled with the parsely.
This is such an easy and quick dish to throw together which makes it perfect for a weekday family dinner, with a bowl of steamed or mashed potatoes.  The chicken is gloriously tender and the carrots cook beautifully in the chicken and vinegar juices.  In fact, if you know anyone who claims that they don’t like carrots, this might well be the dish that converts them!
