slow cooker bourbon chicken


3 lbs boneless skinless chicken thighs
½ teaspoon fresh grated ginger
4 cloves garlic, minced
½ teaspoon crushed red chili flakes
⅓ cup apple juice
1½ tablespoons honey
¼ cup brown sugar
¼ cup ketchup
3 tablespoons cider vinegar
¼ cup water
¼ cup bourbon
¼ cup soy sauce
salt & pepper to taste
3 tablespoons cornstarch
¼ cup sliced green onions (or more to taste)


1. Place the chicken into your slow cooker and mix all of the sauce ingredients together in a bowl, before pouring all over the chicken and cooking on low for 6 – 7 hours, or on high for 3 hours.
2.  Remove the chicken, cut into pieces and keep warm.
3.  Combine the cornstarch with 3 tablespoons of water and whisk the mixture into the sauce, allowing it to thicken for 10 minutes, giving the occasional stir, before returning the chicken to the sauce and adding the green onions.
4.  Serve on a bed of white rice
Something green and bitter is a good contrast to the rich, sweet and spicy sauce, and quickly stir-fried Chinese cabbage would work well as an accompaniment.  Lipsmackingly good, if you do have leftovers, then the cold chicken would make a really good salad alongside some cooling cucumber and cold noodles with a sprinkle of sesame seeds.
