1 pound fingerling potatoes
2 tbsp olive oil
1 tbsp minced fresh thyme
1/2 tsp black pepper
1/2 pound bacon slices, cut in half
1/4 cup chicken broth
1. Toss potatoes in oil, thyme, and pepper in a large bowl. Wrap slice of bacon around the potato tightly
2. Heat a large skillet over medium heat, add potatoes, reduce heat to medium-low. Cook until light brown and bacon has tightened around the potato.
3. Place in crock pot and pour in chicken broth, cook on high for 3 hours.
