Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup low-sugar BBQ sauce
  • 1/4 cup apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cracked black pepper
  • 1/2 tsp sea salt
  • 6 whole grain buns
  • 1 cup shredded cabbage
  • 2 tbsp apple cider vinegar

Instructions:

  1. Lay out a gallon-sized freezer bag.
  2. Add the chicken thighs to the bag.
  3. Pour in the BBQ sauce, apple cider vinegar, and Worcestershire sauce.
  4. Sprinkle in the smoked paprika, garlic powder, onion powder, salt, and pepper.
  5. Seal the bag, removing as much air as possible, and massage the bag to ensure every piece of chicken is coated.
  6. Freeze flat for up to 3 months.
  7. Place the frozen or thawed contents of the bag directly into the slow cooker.
  8. Set the slow cooker to Low for 6 hours and cook until the chicken is tender.
  9. Shred the chicken using two-pronged shredding forks.
  10. Serve the shredded chicken on whole grain buns topped with shredded cabbage tossed in apple cider vinegar.
