Ingredients:

  • 1 lb frozen white sweet corn, thawed and drained
  • 2 medium jalapeños, seeds removed and finely diced
  • 1/2 cup red onion, finely diced
  • 1/3 cup fresh cilantro, finely chopped
  • 1 medium poblano pepper, roasted and diced
  • 2 tbsp fresh lime juice
  • 2 tbsp fresh lemon juice
  • 1/2 tsp kosher salt

Instructions:

  1. In a large mixing bowl, combine the finely diced red onion, jalapeño, lime juice, and lemon juice. Let the mixture sit for 5 minutes to allow the acid to macerate the onions and mellow their flavor.
  2. Ensure the thawed white corn is completely dry using a fine-mesh strainer. Add the corn and the diced roasted poblano to the mixing bowl.
  3. Fold the ingredients together gently with a spatula to combine without bruising the corn kernels.
  4. Add the fresh chopped cilantro and kosher salt. Mix one final time and adjust seasoning to taste before serving.
