- 1 lb frozen white sweet corn, thawed and drained
- 2 medium jalapeños, seeds removed and finely diced
- 1/2 cup red onion, finely diced
- 1/3 cup fresh cilantro, finely chopped
- 1 medium poblano pepper, roasted and diced
- 2 tbsp fresh lime juice
- 2 tbsp fresh lemon juice
- 1/2 tsp kosher salt
Instructions:
- In a large mixing bowl, combine the finely diced red onion, jalapeño, lime juice, and lemon juice. Let the mixture sit for 5 minutes to allow the acid to macerate the onions and mellow their flavor.
- Ensure the thawed white corn is completely dry using a fine-mesh strainer. Add the corn and the diced roasted poblano to the mixing bowl.
- Fold the ingredients together gently with a spatula to combine without bruising the corn kernels.
- Add the fresh chopped cilantro and kosher salt. Mix one final time and adjust seasoning to taste before serving.
