Ingredients:
- 1.5 lb lean ground beef
- 1 packet taco seasoning
- 1 can (15 oz) diced tomatoes with green chilies
- 1 cup chunky salsa
- 8 oz cream cheese, softened and cubed
- 2 cups shredded sharp cheddar cheese
- 1/2 cup sour cream
- 8 small corn tortillas, cut into 1-inch strips
Instructions:
- Lay half of the tortilla strips at the bottom of the slow cooker to create a base.
- In a large bowl or directly in the pot, combine the raw ground beef, taco seasoning, diced tomatoes, and salsa. Mix until the beef is evenly coated.
- Spread the beef mixture over the base layer of tortillas.
- Top the beef mixture with cubed cream cheese, spacing the cubes evenly across the surface.
- Cover and cook on High for 4 hours or Low for 7-8 hours.
- Once the beef is tender and the cream cheese has melted, use a spatula to gently fold the mixture together until it becomes a smooth, creamy consistency.
- Stir in the sour cream.
- Top the entire casserole with the remaining tortilla strips and a heavy layer of shredded cheddar cheese.
- Cover for another 15–20 minutes until the cheese is melted.
