Ingredients:

  • 1.5 lb lean ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 cup chunky salsa
  • 8 oz cream cheese, softened and cubed
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 8 small corn tortillas, cut into 1-inch strips

Instructions:

  1. Lay half of the tortilla strips at the bottom of the slow cooker to create a base.
  2. In a large bowl or directly in the pot, combine the raw ground beef, taco seasoning, diced tomatoes, and salsa. Mix until the beef is evenly coated.
  3. Spread the beef mixture over the base layer of tortillas.
  4. Top the beef mixture with cubed cream cheese, spacing the cubes evenly across the surface.
  5. Cover and cook on High for 4 hours or Low for 7-8 hours.
  6. Once the beef is tender and the cream cheese has melted, use a spatula to gently fold the mixture together until it becomes a smooth, creamy consistency.
  7. Stir in the sour cream.
  8. Top the entire casserole with the remaining tortilla strips and a heavy layer of shredded cheddar cheese.
  9. Cover for another 15–20 minutes until the cheese is melted.
