Ingredients:

  • 2 ¼ cups (280g) all-purpose flour
  • ¾ cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated white sugar
  • 1 large (50g) egg
  • 1 ½ tsp (6ml) vanilla extract
  • 1 tsp (5g) baking powder

Instructions:

  1. Beat the softened butter and granulated sugar together on medium-high speed until the mixture looks pale and fluffy.
  2. Mix in the egg and vanilla extract, beating until fully combined and smooth.
  3. Whisk the flour and baking powder in a separate bowl.
  4. Gradually add the dry mixture to the wet ingredients on low speed, mixing only until the flour streaks disappear.
  5. Turn the dough onto a lightly floured surface and roll to a ¼ inch thickness.
  6. Use cookie cutters to press out shapes, lifting them straight up to maintain clean edges.
  7. Place cookies on a parchment-lined sheet and bake at 350°F (175°C) for 8–10 minutes.
  8. Remove the cookies from the oven the moment the edges are set but before they turn brown.
