Ingredients:
- 2 ¼ cups (280g) all-purpose flour
- ¾ cup (170g) unsalted butter, softened
- 1 cup (200g) granulated white sugar
- 1 large (50g) egg
- 1 ½ tsp (6ml) vanilla extract
- 1 tsp (5g) baking powder
Instructions:
- Beat the softened butter and granulated sugar together on medium-high speed until the mixture looks pale and fluffy.
- Mix in the egg and vanilla extract, beating until fully combined and smooth.
- Whisk the flour and baking powder in a separate bowl.
- Gradually add the dry mixture to the wet ingredients on low speed, mixing only until the flour streaks disappear.
- Turn the dough onto a lightly floured surface and roll to a ¼ inch thickness.
- Use cookie cutters to press out shapes, lifting them straight up to maintain clean edges.
- Place cookies on a parchment-lined sheet and bake at 350°F (175°C) for 8–10 minutes.
- Remove the cookies from the oven the moment the edges are set but before they turn brown.
