Ingredients:

  • 2 lbs baby potatoes, halved if larger than 1 inch
  • 1 tsp kosher salt
  • 3 tbsp unsalted butter, melted
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp cracked black pepper

Instructions:

  1. Rinse the baby potatoes under cold water to remove any grit and pat them completely dry with a towel. Place them in the slow cooker basin and toss with salt.
  2. In a medium mixing bowl, whisk together the melted butter, olive oil, minced garlic, rosemary, thyme, and black pepper until the garlic is evenly suspended.
  3. Pour the herb mixture over the potatoes and stir with a spatula until every potato is glistening. Cover with the lid and set to High for 3 hours.
