Ingredients:
- 2 lbs baby potatoes, halved if larger than 1 inch
- 1 tsp kosher salt
- 3 tbsp unsalted butter, melted
- 2 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1/2 tsp cracked black pepper
Instructions:
- Rinse the baby potatoes under cold water to remove any grit and pat them completely dry with a towel. Place them in the slow cooker basin and toss with salt.
- In a medium mixing bowl, whisk together the melted butter, olive oil, minced garlic, rosemary, thyme, and black pepper until the garlic is evenly suspended.
- Pour the herb mixture over the potatoes and stir with a spatula until every potato is glistening. Cover with the lid and set to High for 3 hours.
