Ingredients:
- 3 large overripe bananas, mashed (approx. 340g)
- 1 large egg, room temperature (50g)
- 1/2 cup plain Greek yogurt, 0% fat (120g)
- 1/4 cup pure maple syrup (80g)
- 1 tsp pure vanilla extract (5ml)
- 2 cups Kodiak Cakes Power Cakes Mix (212g)
- 1 tsp ground cinnamon (5g)
- 1/2 tsp baking powder (3g)
- 1/4 tsp sea salt (1.5g)
Instructions:
- Preheat your oven to 350°F (180°C) and line a 12-cup muffin tin with paper liners or non-stick spray.
- In a large mixing bowl, mash the bananas until smooth. Whisk in the egg, Greek yogurt, maple syrup, and vanilla extract until the mixture is cohesive.
- Gently fold in the Kodiak mix, cinnamon, baking powder, and salt using a spatula. Mix only until the flour streaks disappear.
- Allow the batter to sit undisturbed for 5 minutes for the 'hydration rest'. This allows the whole grains to soften and the leavening to activate.
- Divide the batter evenly among the 12 muffin cups. Bake for 18 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
