Ingredients:

  • 3 large overripe bananas, mashed (approx. 340g)
  • 1 large egg, room temperature (50g)
  • 1/2 cup plain Greek yogurt, 0% fat (120g)
  • 1/4 cup pure maple syrup (80g)
  • 1 tsp pure vanilla extract (5ml)
  • 2 cups Kodiak Cakes Power Cakes Mix (212g)
  • 1 tsp ground cinnamon (5g)
  • 1/2 tsp baking powder (3g)
  • 1/4 tsp sea salt (1.5g)

Instructions:

  1. Preheat your oven to 350°F (180°C) and line a 12-cup muffin tin with paper liners or non-stick spray.
  2. In a large mixing bowl, mash the bananas until smooth. Whisk in the egg, Greek yogurt, maple syrup, and vanilla extract until the mixture is cohesive.
  3. Gently fold in the Kodiak mix, cinnamon, baking powder, and salt using a spatula. Mix only until the flour streaks disappear.
  4. Allow the batter to sit undisturbed for 5 minutes for the 'hydration rest'. This allows the whole grains to soften and the leavening to activate.
  5. Divide the batter evenly among the 12 muffin cups. Bake for 18 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool in the pan for 5 minutes before transferring to a wire rack.
