Ingredients:

  • 2 cups (480ml) heavy whipping cream, cold
  • 14 oz (397g) sweetened condensed milk, chilled
  • 2 tsp (10ml) pure vanilla extract
  • 0.125 tsp fine sea salt
  • 0.25 tsp royal blue gel food coloring
  • 1 cup (120g) chocolate chip cookies, roughly chopped
  • 1 cup (110g) chocolate sandwich cookies, chopped
  • 0.25 cup (45g) mini semi-sweet chocolate chips

Instructions:

  1. Place a large stainless steel mixing bowl and beaters in the freezer for 10 minutes to chill.
  2. Chop the chocolate chip cookies and sandwich cookies into a mix of small 'dust' and larger 'chunky' sizes.
  3. Pour the cold heavy cream into the chilled bowl and whip using a hand mixer on medium-high speed until stiff peaks form.
  4. In a separate medium bowl, whisk together the chilled sweetened condensed milk, vanilla extract, sea salt, and blue gel food coloring until the color is uniform and electric blue.
  5. Gently fold the blue condensed milk mixture into the whipped cream using a silicone spatula, being careful not to deflate the aeration.
  6. Fold in the chopped cookies and mini chocolate chips until evenly distributed.
  7. Transfer the mixture into a 9x5-inch metal loaf pan. Cover with parchment paper, pressing it directly onto the surface to prevent ice crystals.
  8. Freeze for at least 6 hours, or until firm, before serving.
