Ingredients:
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp black pepper
- 1 tsp kosher salt
- 1/2 tsp cayenne pepper
- 1 cup tomato puree
- 1/4 cup apple cider vinegar
- 2 tbsp Worcestershire sauce
- 3 tbsp maple syrup
- 1 tsp liquid smoke
- 1/2 tsp salt
- 5.5 lbs beef short ribs
Instructions:
- Pat the beef short ribs completely dry with paper towels. In a small bowl, combine all dry rub ingredients (smoked paprika, garlic powder, onion powder, black pepper, kosher salt, and cayenne pepper). Generously coat every side of the ribs, pressing the spices into the meat.
- Place the seasoned ribs in the slow cooker, stacking them neatly. Cover and cook on Low for 8 hours (or High for 4 hours) until the meat is tender and easily pulls away from the bone.
- While ribs are cooking, prepare the BBQ sauce by mixing tomato puree, apple cider vinegar, Worcestershire sauce, maple syrup, liquid smoke, and salt.
- Preheat the oven broiler. Carefully transfer the cooked ribs to a broiler pan.
- Brush the low-sugar BBQ sauce liberally over the top of each rib. Broil for 3–5 minutes, watching closely, until the sauce is bubbling and slightly charred.
