Ingredients:

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 0.5 lb ground pork
  • 0.5 cup Italian seasoned breadcrumbs
  • 1 large egg, beaten
  • 0.25 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 24 oz marinara sauce
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 2 tbsp olive oil

Instructions:

  1. In a large mixing bowl, combine the beaten egg, breadcrumbs, Parmesan, minced garlic, parsley, salt, and pepper. Stir into a paste to ensure the binder is evenly distributed.
  2. Add the ground beef and ground pork to the paste, mixing with your hands until just combined. Do not overmix to avoid tough meatballs.
  3. Scoop approximately 1.5 tbsp of the mixture and roll gently between your palms to create 24 uniform spheres.
  4. Drizzle olive oil across the bottom of the slow cooker. Place the meatballs in the pot and cover with marinara sauce, dried oregano, and red pepper flakes.
  5. Cover and cook on High for 4 hours or Low for 8 hours until meatballs are cooked through.
