Ingredients:

  • 1.5 lbs lean ground beef (90/10)
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 3 Bell Peppers (Green, Red, Orange)
  • 29 oz fire roasted diced tomatoes
  • 15 oz tomato sauce
  • 4 cups beef bone broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 cup long grain white rice, uncooked
  • Salt and black pepper

Instructions:

  1. Heat the olive oil in a large skillet over medium high heat. Add the ground beef and onion.
  2. Cook 6-8 minutes until the beef is browned and the onions are translucent.
  3. Stir in the minced garlic. Cook for 1 minute until you smell that distinct, sharp garlic aroma.
  4. Transfer the beef mixture into your 6 quart slow cooker.
  5. Toss in the chopped green, red, and orange bell peppers.
  6. Pour in the fire roasted tomatoes, tomato sauce, beef bone broth, and Worcestershire sauce.
  7. Add the brown sugar, oregano, smoked paprika, salt, and pepper. Give it a good stir to combine everything.
  8. Cover and cook on LOW for 6 hours.
  9. About 45 minutes before serving, stir in the uncooked white rice.
  10. Continue cooking on LOW until the rice is tender and the soup has thickened.
