Ingredients:
- 1.5 lbs lean ground beef (90/10)
- 1 large yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 3 Bell Peppers (Green, Red, Orange)
- 29 oz fire roasted diced tomatoes
- 15 oz tomato sauce
- 4 cups beef bone broth
- 2 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 cup long grain white rice, uncooked
- Salt and black pepper
Instructions:
- Heat the olive oil in a large skillet over medium high heat. Add the ground beef and onion.
- Cook 6-8 minutes until the beef is browned and the onions are translucent.
- Stir in the minced garlic. Cook for 1 minute until you smell that distinct, sharp garlic aroma.
- Transfer the beef mixture into your 6 quart slow cooker.
- Toss in the chopped green, red, and orange bell peppers.
- Pour in the fire roasted tomatoes, tomato sauce, beef bone broth, and Worcestershire sauce.
- Add the brown sugar, oregano, smoked paprika, salt, and pepper. Give it a good stir to combine everything.
- Cover and cook on LOW for 6 hours.
- About 45 minutes before serving, stir in the uncooked white rice.
- Continue cooking on LOW until the rice is tender and the soup has thickened.
