Ingredients:
- 2 lbs fresh or frozen strawberries, hulled and halved
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1 box yellow or white cake mix
- 1/2 cup unsalted butter, melted
- 1/4 cup brown sugar, packed
Instructions:
- Toss the strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract in a mixing bowl until berries are evenly coated and cornstarch is dissolved. Pour the mixture into the bottom of the slow cooker in an even layer.
- Sprinkle the dry cake mix evenly over the top of the strawberry layer without stirring.
- Drizzle the melted butter across the top of the cake mix, then lightly sprinkle the brown sugar over the butter.
- Cover and cook on High for 3 hours or Low for 6 hours until the fruit is bubbling and the topping has set into a soft, cake-like crust.
