Ingredients:

  • 2 lbs fresh or frozen strawberries, hulled and halved
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1 box yellow or white cake mix
  • 1/2 cup unsalted butter, melted
  • 1/4 cup brown sugar, packed

Instructions:

  1. Toss the strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract in a mixing bowl until berries are evenly coated and cornstarch is dissolved. Pour the mixture into the bottom of the slow cooker in an even layer.
  2. Sprinkle the dry cake mix evenly over the top of the strawberry layer without stirring.
  3. Drizzle the melted butter across the top of the cake mix, then lightly sprinkle the brown sugar over the butter.
  4. Cover and cook on High for 3 hours or Low for 6 hours until the fruit is bubbling and the topping has set into a soft, cake-like crust.
