Ingredients:

  • 2 cups (180g) old-fashioned rolled oats
  • 1/2 cup (115g) unsalted butter, melted
  • 1/3 cup (65g) maple syrup
  • 1 tsp (5g) ground cinnamon
  • 1/4 tsp (1.5g) kosher salt
  • 1 tsp (5ml) vanilla extract
  • 2 cups (300g) fresh strawberries, diced small
  • 2 tbsp (16g) cornstarch
  • 1 tbsp (15ml) lemon juice
  • 2 tbsp (25g) brown sugar

Instructions:

  1. Line the slow cooker with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a mixing bowl, combine rolled oats, melted butter, maple syrup, cinnamon, salt, and vanilla extract. Stir until the oats are thoroughly coated and the mixture is cohesive.
  3. Press the oat mixture firmly into the bottom of the slow cooker using a spatula to create a level, compacted layer.
  4. In a separate bowl, toss the diced strawberries with cornstarch, lemon juice, and brown sugar until coated in a powdery glaze.
  5. Carefully spread the strawberry mixture over the oat base without pressing down.
  6. Cover with the lid and cook on Low for 7-8 hours or on High for 3-4 hours.
