Ingredients:
- 2 cups (180g) old-fashioned rolled oats
- 1/2 cup (115g) unsalted butter, melted
- 1/3 cup (65g) maple syrup
- 1 tsp (5g) ground cinnamon
- 1/4 tsp (1.5g) kosher salt
- 1 tsp (5ml) vanilla extract
- 2 cups (300g) fresh strawberries, diced small
- 2 tbsp (16g) cornstarch
- 1 tbsp (15ml) lemon juice
- 2 tbsp (25g) brown sugar
Instructions:
- Line the slow cooker with parchment paper, leaving an overhang on the sides for easy removal.
- In a mixing bowl, combine rolled oats, melted butter, maple syrup, cinnamon, salt, and vanilla extract. Stir until the oats are thoroughly coated and the mixture is cohesive.
- Press the oat mixture firmly into the bottom of the slow cooker using a spatula to create a level, compacted layer.
- In a separate bowl, toss the diced strawberries with cornstarch, lemon juice, and brown sugar until coated in a powdery glaze.
- Carefully spread the strawberry mixture over the oat base without pressing down.
- Cover with the lid and cook on Low for 7-8 hours or on High for 3-4 hours.
