I'm Priya, and I believe the slow cooker is the perfect vessel for developing deep, complex flavors. Growing up, the smell of blooming spices was the soundtrack of my home. Now, as a modern home cook, I've found that the low-and-slow method of a crockpot is actually traditionally authentic for many curries—it mimics the clay pot cooking of the past.
